In a large mixing bowl, add all the dry ingredients
Pour in the water starting with 1 1/2 cups gradually adding more if necessary.
Mix well using a whisk until you have a smooth batter.
The batter should be thick enough to coat the back of a spoon.
Cover and set aside for 1 1/2 - 2hrs. It needs to rise and fill up with air bubbles.
Heat a flat non stick pan and lightly oil it.
Add the batter using a ladle. Cover and cook for 3-4 min.
Once the top is dry, flip it over and cook the other side for 2 min.
Set aside and repeat with the rest
