Ingredients

  • 1/2 onion; diced
  • 1/4 bell peppers; diced
  • 1 clove garlic; minced
  • 1/2 fresh chilli; chopped
  • 1 small can of tomato; you can use whole or diced
  • 1 tbsp tomato paste
  • 1 tsp sugar
  • 1 tsp ground cumin
  • 1 tsp spanish paprika
  • 4 eggs
  • 1 tsp salt

Instructions

  1. In a pan, sauté the onion for 2 min
  2. Add the bell pepper, garlic and chilli. cook this on medium flame for 2 more min
  3. Next, add the canned tomato and tomato paste followed by the cumin, paprika, sugar.
  4. Let the tomato base cook until the oil starts to separate (the mixture will thicken thats how you know you are ready for the next step)
  5. Sprinkle in the salt
  6. Make a well in the gravy and add an egg. Repeat until you use up all the eggs. Cover and cook for 8 min
  7. Garnish with coriander
