If you’re looking for a delicious grilled chicken recipe that conjures island flavours, this is it. This recipe instantly whisks you on a whimsical adventure on an island filled with coconuts and erm…chickens (Ha!). The chicken is marinated in simple spices then covered in a luxurious creamy sauce and grilled. But It doesn’t end there, no…it can’t…it goes a step further… after grilling, the chicken then goes back into that remaining luxurious oh-so-good sauce and served.

You absolutely need something to soak up all that goodness! I recommend fries, garlic bread or chapati.

Coconut Grilled chicken | Kuku Paka

Chicken coated in coconut sauce and grilled to perfection

  • 1 Whole Chicken (Cut)
  • 2 tsp tandoori powder (*see spice mix below)
  • 2 cups coconut cream
  • 1/4 cup chopped cilantro (dania (Swahili name))
  • 2 tbsp garlic (crushed)
  • 1 Onion (chopped)
  • 1 tomato (chopped)
  • 1 tbsp tomato paste
  • salt (to taste)
  • pepper (to taste)
  • 1 Green chilli (optional)
  • 1 lemon (juiced)

Spice Mix (If you don’t have tandoori powder)

  • 1 tsp red chilli (ground)
  • 1/2 tsp turmeric (ground)
  • 1/2 tsp spanish paprika
  • 1 tsp Cumin (ground)
  1. Soak chicken pieces in water with 1 lemon and 1 tbsp salt. Soak for 5 min
  2. In a zip lock bag, add 1 tbsp tandoori powder and 2 tbsp olive oil
  3. Add the chicken and marinate for 20 min

The sauce

  1. In a thick bottomed pan, add diced onion and sauté until slightly brown
  2. Add garlic, cilantro and tomato paste. Cook for 1 min. Add 1 tbsp tandoori
  3. Cook until the tomatoes break down
  4. Add the coconut cream and bring to a gentle boil
  5. Cool the sauce and blend in a blender until smooth
  6. Reserve half the sauce for later and dip the chicken in the other half.
  7. Grill until cooked through
  8. Add the sauce you set aside and coat the grilled chicken
  9. serve
