Slime-free Okra

Loaded with vitamin A, C and Zinc the long slender tube like beauty that is okra is not only great for your skin but also your digestive system thanks for all the fibre it contains.

The list of health claims with this vegetable are many but despite this, a number of people are unable to eat it because of its slimy nature (we get it, we don’t like slimy people okra either).

Here is a recipe for what i like to call, ‘toasted okra’. I love adding onions, peppers and a touch of lemon to lift the whole dish.

Slime-free Okra

Easy toasted okra with zero slime

Ingredients

  • 25 okra
  • 1 onion; cut in rings
  • 1/2 capsicum; diced
  • 2 tsp vegetable oil
  • 1 1/2 tsp minced garlic
  • 1 tsp black pepper
  • juice of 1/2 lemon
  • 1 tsp salt

 

Instructions

 

  1. Cut the okra into small bite sizes
  2. Heat a thick bottomed pan until smoking hot and add the okra
  3. Keep mixing the okra so they don’t burn. Think of this as toasting, you want to toast the okra. You can add 1 tsp vegetable oil if you like
  4. Cook for 8 min then set the okra aside.
  5. In the same pan, add the onion rings and capsicum. Again, you can add 1 tsp vegetable oil if you like. Cook for 1 min.
  6. Add minced garlic followed by black pepper. Cook for 1 min then add the lemon juice and cook for a minute.
  7. Remove from the flame and mix the okra and the onions together.
  8. Add salt to taste
