Fluffy Pancakes with Coconut Buttercream

These pancakes turn out fluffy every-time! It makes exactly 10 pieces

Ingredients

Pancakes

  • 1 1/2 Cups All purpose flour
  • 2 tbsp caster sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1 2/3 cups milk
  • 2 1/2 tbsp vegetable oil

Coconut butter cream

  • 3 tbsp Butter room temperature
  • 2 1/2 tbsp icing sugar
  • 1 tbsp coconut powder
  • 1 tsp water

Notes

  • I highly recommend a good non-stick pan because adding butter to the pan tends to change the texture of the pancake.
  • Another thing you need to look out for is temperature - you don't want your pan too hot.
  • If you would like, you can add vanilla essence to the batter - i personally don't think its necessary
