Fluffy Pancakes with Coconut Buttercream

Here is a great breakfast classic – pancakes.

My kids love me a lot more when they wake up to a stack of these beauties. Also, they sit quietly at the table and gobble these down while i sip on my second cup of coffee (in peace)

This easy recipe makes what are in my humble opinion, the best pancakes ever. These are light, fluffy and just waiting to be soaked in syrup or if you’re feeling exotic, my coconut butter cream frosting.

A few pointers:

  • I highly recommend a good non-stick pan because adding butter to the pan tends to change the texture of the pancake.
  • Another thing you need to look out for is temperature – you don’t want your pan too hot.
  • If you would like, you can add vanilla essence to the batter – i personally don’t think its necessary

Fluffy Pancakes with Coconut Buttercream

These pancakes turn out fluffy every-time! It makes exactly 10 pieces

Ingredients
  

Pancakes

  • 1 1/2 Cups All purpose flour
  • 2 tbsp caster sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1 2/3 cups milk
  • 2 1/2 tbsp vegetable oil

Coconut butter cream

  • 3 tbsp Butter room temperature
  • 2 1/2 tbsp icing sugar
  • 1 tbsp coconut powder
  • 1 tsp water
