Moist Chocolate Cake

If I were stuck on an island and could only have one recipe, it would be a cake recipe – a good, simple quick to put together cake recipe.
Luckily for me, I already have a good one in my recipe repertoire and I don’t have to break a sweat making it.

This cake is so good that lil’ man could not wait and I don’t blame him!

One of the ingredients that makes this cake so light is the vegetable oil. That makes it a “healthy cake” right? Joking. I have tried making this with melted butter but prefer vegetable oil.

If you’re baking this for someone with allergies, I have a few variations for you:

Lactose intolerant? Use almond or hazelnut milk instead.
For a gluten-free cake, replace the flour with a gluten-free flour mix
Egg allergy?  An egg is replaced with 1 tbsp ground flax seeds and 3 tbsp water

This cake works for everyone! I love it!

Moist Chocolate Cake

Quick recipe for a moist chocolate cake thats a real winner!

Ingredients
  

  • 2 cups All purpose flour
  • 2 cups caster sugar
  • 2 tsp baking powder
  • 1 1/2 tsp bicarbonate of soda
  • 2 Eggs
  • 1/2 Cup Cocoa powder
  • 1 cup black coffee 2 tsp instant coffee in a cup of hot water
  • 1/2 cup vegetable oil
  • 1 cup Milk

Chocolate ganache

  • 250 g Chocolate chips
  • 230 ml Heavy cream

    Hi love this easy recipe u r doing great work but just wanted to ask if I can use plain water instead of coffee as am not a big fan of coffee😘

      You could use less coffee, as it is simply to enhance the chocolate flavour, but water works just as well too!💓

      Hi Sumi, I melt the chocolate in a microwave (about 2 min) i then add warmed cream and mix the two

    Hi vanesaa, i would love to try your recipe, but can you convert this recipe to gram? I really have no clue about cup you write here. I’ve tried the cup measurement before and convert it myself with google but 😢😢😢😢

      Heres the weight measurements for this cake:
      All purpose flour 256 gms
      caster sugar 400 gms
      cocoa powder 68 gms
      black coffee 236ml
      milk 256ml
      vegetable oil 118ml

      i say 1-2 days on a counter if you’re in a cool environment and up to 4 days in the fridge. Whenever i make this cake it only lasts a few hours before theres no more left 🙂

    1. That would be best. That said, i now have an over that only heats up from the bottom and it works just fine. Be sure to preheat your oven

        Hi Neena, I add equal amounts of melted chocolate and cream. So, if you use 250gms chocolate add 250ms cream and mix well. You can reduce the cream to make a thicker ganache

      Add baking paper to the bottom of the pan to avoid the cake sticking and make sure you butter the sides of the pan well.

      I have managed with both maple syrup as well as sugar. I would say use about 1/2-2/3 cup so it isnt too over powering.

    Vanessa, I have used your recipe so so many times. For birthdays, events, just because friends wanted cake and you name it. No i am not a baker in fact I can not bake to safe my life. But this one makes me an chocolate cake master.
