Austrian chopped Pancake

Ingredients

  • 3 tbsp All purpose Four
  • 3 Eggs
  • 1 tbsp Sugar plus 1 tbsp sugar to sprinkle towards the end
  • 1 pinch salt
  • 1 tsp vanilla essence
  • 1/4 cup Milk You might need more so have extra
  • 1 tbsp Icing sugar
  • 2 tbsp Butter
  • 3 tbsp Rum
  • 1/2 Cup Apple puree

Instructions

  • In a bowl, Add the dry ingredients. Pour in the milk and whisk until well mixed with no lumps. Batter should not be too thick or too thin.
  • Add the eggs and fold in. Don't over mix
  • Add the rum
  • In a pan, Heat the butter. 
  • Pour all the batter in the pan and cover. Cook for 3 min then flip it over.
  • Using a wooden spoon or two, break the pancake into smaller pieces.
  • Sprinkle 1 tbsp sugar and keep mixing the pieces so they get evenly coated with the sugar
  • Plate up and sprinkle some icing sugar
  • Serve with the apple puree
