‘Do you remember the time when we fell in love? Do you remember the time when we first met?’ Yes, yes, I do remember the first time oh sweet Kaiserschmarrn! My brother made me some when we were last together in Watamu which is a beautiful part of the Kenyan coastline.
This recipe is my take on the classic and it is a great breakfast option although, dare i say I love it as a snack! This comes in handy when the I’m half asleep in the morning and the kids want breakfast or when they have friends over and they’re all feeling peckish.
Now, this recipe is so versatile. Love chocolate chips? Add them to the mix. Love blueberries? add those to the mix too! The list is endless! Ive added shredded coconut, fruit and even chia seeds!
Here is a secret icing recipe that never fails me: 4 tbsp of butter, 2 tbsp coconut cream, 3 tbsp icing sugar. Mix them all up and serve as a side with Kaiserschmarrn
Now the original authentic recipe calls for some raisins but my kids and I don’t like them so I omit them.

Kaiserschmarrn!
Ingredients
- 3 tbsp All purpose Four
- 3 Eggs
- 1 tbsp Sugar plus 1 tbsp sugar to sprinkle towards the end
- 1 pinch salt
- 1 tsp vanilla essence
- 1/4 cup Milk You might need more so have extra
- 1 tbsp Icing sugar
- 2 tbsp Butter
- 3 tbsp Rum
- 1/2 Cup Apple puree
Instructions
- In a bowl, Add the dry ingredients. Pour in the milk and whisk until well mixed with no lumps. Batter should not be too thick or too thin.
- Add the eggs and fold in. Don’t over mix
- Add the rum
- In a pan, Heat the butter.
- Pour all the batter in the pan and cover. Cook for 3 min then flip it over.
- Using a wooden spoon or two, break the pancake into smaller pieces.
- Sprinkle 1 tbsp sugar and keep mixing the pieces so they get evenly coated with the sugar
- Plate up and sprinkle some icing sugar
- Serve with the apple puree
