Mama’s french Apple Tart

Child hood memories are a huge source of inspiration in my cooking today. They say the smell and taste of something can send one on a trip down memory lane – this certainly rings true for me when i make my mothers french apple tart. From the time its in the oven, I am instantly whisked back to my mothers kitchen where i waited with beaming eyes for the tart to be ready. My sisters and i always fought for the last piece!

 

Mama Vanessa’s apple tart

Sweet pastry crust filled with apples and drenched in custard

  • 1 1/2 cups All purpose flour
  • 1/3 cup Raw brown sugar
  • 130 gms cold butter, diced
  • 1-2 tbsp water

Filling

  • 3 tbsp All purpose Flour
  • 3 tbsp caster sugar
  • 1 1/4 Cups milk
  • 1/4 tsp Vanilla essence
  • 3 Apples (firm red ones work best)
  1. Mix the flour, sugar and butter. Rub together until the mix resembles bread crumbs

     

  2. Add the egg yolk and water and form a dough. Don’t over work the dough because this will melt the butter.
  3. Cover and put in the fridge for 20 min

Filling

  1. Peel then cut the apples in half. Thinly slice each piece.

     

  2. In a bowl add the eggs, milk, sugar, vanilla and flour.
  3. Whisk until there are no lumps

Putting it together

  1. Take the dough out of the fridge and roll it out
  2. Cover a tart mould
  3. Arrange the sliced apples in the tart mould
  4. Pour the custard mix over the apples
  5. Bake at 200°C for 20 min until the crust is golden brown and the custard filling has firmed up

     

  6. This tart is best served cold
