Take any food, make it small and it instantly becomes classy. I love samosa but theres no way I am sitting to fold mini samosas. Who has time for that?! Not me. I’m busy trying to keep my 3 year old alive most of the time -if you have a couch jumping-table climbing toddler, you know what I mean.
In my quest to simplify samosa, I managed to come up with a cute Hors d’oeuvre that can be made in a snap.

Drumroll please! Meet, samosa cups, my new go to lazy entertaining snack.

 

It really doesn’t get any simpler. Make your filling, buy some samosa wrappers, grab a muffin tray, bake, fill, presto! Here’s a handy video I made showcasing these beauties.

Samosa Cups

Ingredients

Samosa Cups
You will need:
300 gms minced lamb
300 gms minced beef
1 1/2 tsp curry powder
1/2 tsp turmeric
1/2 tsp chilli powder
1 1/2 tsp salt
1 tsp cumin powder
1 tbsp ginger garlic paste
1 lemon; juiced for marinade
2 onions; diced
2 lemons; juiced when cooking the minced meat
2 tbsp chopped coriander
1 pkt samosa or spring roll wraps

Instructions

  1. In a bowl, add all the minced meat, curry powder, turmeric, chilli powder, ginger-garlic paste, salt and lemon juice.
  2. Cover and set aside to marinate for 30 min.
    In the mean time, lets make the cups.
  3. Preheat your oven at 200ºc
  4. Grab a muffin tin and lightly brush a little oil or melted butter
    Cut the samosa wraps into small squares
  5. Dip the cut piece in water, and brush a little oil or melted butter onto the samosa wrap.
  6. This makes it crispy without being too dry.
  7. Line each segment of the muffin tin with a samosa wrapper
  8. Bake in a 200ºc oven for 12 min
  9. Add 1 tbsp oil into a thick bottomed pan. Add the marinated minced meat and sauté until the meat separates and browns slightly.
  10. Next add in the chopped onions and cook-constantly stirring until the onions are translucent in colour.
  11. Add the lemon juice followed by chopped coriander. Mix well and cook for a further 5 min.
  12. Set aside to cool.

Assembly time
Take a little of the minced meat mixture and add if to each cup.
Garnish with a small lemon wedge and coriander.
