Mofa bread
This bread goes exceptionally well with stews, curries and anything grilled.

You need:
- 2 1/2 cups all-purpose flour
- 2 tbsp maize flour
- 1 tbsp corn starch
- 2 small tsp baking powder
- 1 tsp salt
- 1/2 tsp garlic powder (or fresh garlic paste)
- 1 1/2 tsp instant yeast
- 2–3 tbsp sugar
- 1 1/2 –2cups water
- In a large mixing bowl, add all the dry ingredients
- Pour in the water starting with 1 1/2 cups gradually adding more if necessary.
- Mix well using a whisk until you have a smooth batter.
- The batter should be thick enough to coat the back of a spoon.
- Cover and set aside for 1 1/2 – 2hrs. It needs to rise and fill up with air bubbles.
- Heat a flat non stick pan and lightly oil it.
- Add the batter using a ladle. Cover and cook for 3-4 min.
- Once the top is dry, flip it over and cook the other side for 2 min.
- Set aside and repeat with the rest
