Mofa bread

This bread goes exceptionally well with stews, curries and anything grilled.

Ingredients

You need:

  • 2 1/2 cups all-purpose flour
  • 2 tbsp maize flour
  • 1 tbsp corn starch
  • 2 small tsp baking powder
  • 1 tsp salt
  • 1/2 tsp garlic powder (or fresh garlic paste)
  • 1 1/2 tsp instant yeast
  • 23 tbsp sugar
  • 1 1/22cups water

Instructions

  1. In a large mixing bowl, add all the dry ingredients
  2. Pour in the water starting with 1 1/2 cups gradually adding more if necessary.
  3. Mix well using a whisk until you have a smooth batter.
  4. The batter should be thick enough to coat the back of a spoon.
  5. Cover and set aside for 1 1/2 – 2hrs. It needs to rise and fill up with air bubbles.
  6. Heat a flat non stick pan and lightly oil it.
  7. Add the batter using a ladle. Cover and cook for 3-4 min.
  8. Once the top is dry, flip it over and cook the other side for 2 min.
  9. Set aside and repeat with the rest
