An Egg Recipe to Make Your Heart Sing (Shakshuka)

The word ‘shuka’ means get down in Swahili and this recipe makes me want to get down and dance because of how easy and great it is. Haha. I know that was a terrible attempt at trying to be cool!

If you follow my blog, you will notice a trend here. I like easy recipes. Between playing taxi driver, teacher, nurse, counselor, cleaner and manager to my family along with trying to balance my career, time is never on my side so I need quick, delicious recipes that are not time consuming.

Do you like breakfast for dinner? I know I do. Throw in a salad and some crusty garlic bread and boom you’re good to go! On days when I’m feeling more ambitious I make coconut spinach as a side dish.

You can totally tweak this recipe to your liking and add ingredients like green chilies to give it a kick.

This was borrowed from our North African friends so assalam aleikum and shukran to them.

Shakshuka

An Egg recipe to make your heart sing

Ingredients
  

  • 1/2 onion; diced
  • 1/4 bell peppers; diced
  • 1 clove garlic; minced
  • 1/2 fresh chilli; chopped
  • 1 small can of tomato; you can use whole or diced
  • 1 tbsp tomato paste
  • 1 tsp sugar
  • 1 tsp ground cumin
  • 1 tsp spanish paprika
  • 4 eggs
  • 1 tsp salt

Instructions
 

  • In a pan, sauté the onion for 2 min
  • Add the bell pepper, garlic and chilli. cook this on medium flame for 2 more min
  • Next, add the canned tomato and tomato paste followed by the cumin, paprika, sugar.
  • Let the tomato base cook until the oil starts to separate (the mixture will thicken thats how you know you are ready for the next step)
  • Sprinkle in the salt
  • Make a well in the gravy and add an egg. Repeat until you use up all the eggs. Cover and cook for 8 min
  • Garnish with coriander
