The word ‘shuka’ means get down in Swahili and this recipe makes me want to get down and dance because of how easy and great it is. Haha. I know that was a terrible attempt at trying to be cool!
If you follow my blog, you will notice a trend here. I like easy recipes. Between playing taxi driver, teacher, nurse, counselor, cleaner and manager to my family along with trying to balance my career, time is never on my side so I need quick, delicious recipes that are not time consuming.
Do you like breakfast for dinner? I know I do. Throw in a salad and some crusty garlic bread and boom you’re good to go! On days when I’m feeling more ambitious I make coconut spinach as a side dish.
You can totally tweak this recipe to your liking and add ingredients like green chilies to give it a kick.
This was borrowed from our North African friends so assalam aleikum and shukran to them.

Shakshuka
Ingredients
- 1/2 onion; diced
- 1/4 bell peppers; diced
- 1 clove garlic; minced
- 1/2 fresh chilli; chopped
- 1 small can of tomato; you can use whole or diced
- 1 tbsp tomato paste
- 1 tsp sugar
- 1 tsp ground cumin
- 1 tsp spanish paprika
- 4 eggs
- 1 tsp salt
Instructions
- In a pan, sauté the onion for 2 min
- Add the bell pepper, garlic and chilli. cook this on medium flame for 2 more min
- Next, add the canned tomato and tomato paste followed by the cumin, paprika, sugar.
- Let the tomato base cook until the oil starts to separate (the mixture will thicken thats how you know you are ready for the next step)
- Sprinkle in the salt
- Make a well in the gravy and add an egg. Repeat until you use up all the eggs. Cover and cook for 8 min
- Garnish with coriander
