Quick Kebabs

We all need an easy quick recipe for ‘those days’. If you can get the mains out of the way then the rest is a walk in the park!

I had minced meat in my fridge and I couldn’t figure out what to do that required minimum effort. Just then my husband walked in and said, “make kebabs“ hallelujah! I dumped the ingredients in a food processor, skewered them and bam! in the oven! The kebabs were juicy and full of flavour! Definitely a keeper.

My family and I can totally have this on its own but, in the spirit of being a good mum and offering options, I add in a salad and some buttered-naan (freezer friendly recipe alert)

Quick Kebabs

Equipment

  • skewers pre soaked in water for 20 min if you want to grill the kebabs on coal

Ingredients
  

For this recipe you will need:

  • 1 1/2 onion
  • 1 tbsp spanish paprika
  • 1 tsp black pepper
  • 1/2 tsp chilli flakes
  • 1 tsp onion powder optional
  • 1 tsp ground turmeric
  • 2 tsp cumin powder
  • 5 cloves garlic
  • 1/2 inch ginger
  • Handfull coriander
  • 500 gms minced meat
  • 2 tsp salt
  • Butter to brush on kebabs

Instructions
 

  • If you have a food processor then your life will be so much easier.
  • Peel and quarter your onion then add it to your food processor along with the ginger and garlic.
  • Pulse it a few times until the onion, ginger and garlic is finely diced.
  • Next in goes the coriander, don’t be scared to use the stalks as they are full of flavour. Pulse once
  • Minced meat is next in line, add it in and pulse it a few times.
  • Lastly, add all the spices and give it one final pulse. We are almost there!
  • Grab a cooling rack and a baking tray, this makes the kebabs cook evenly and avoids too much oven clean up after.
  • Take a handfull of the meat mixture and smoosh it onto a skewer. Heres a video of how its done.
  • Bake at 200ºc for 15 – 20 min turn halfway (15 Minutes)
