The bread you never knew you needed…

Let me introduce you to this beautiful pancake looking stack called ‘mkate wa mofa’. Imagine a bread like naan but better. Full of little air pockets waiting to soak up a good curry or sauce. The serving options don’t end there though, it pairs well with anything grilled or even on it’s own. I call them small but mighty because they’re very filling.
Mkate wa mofa freezes well but be sure to wrap it up in cling film.

Mofa bread

This bread goes exceptionally well with stews, curries and anything grilled.

Ingredients

You need:

  • 2 1/2 cups all-purpose flour
  • 2 tbsp maize flour
  • 1 tbsp corn starch
  • 2 small tsp baking powder
  • 1 tsp salt
  • 1/2 tsp garlic powder (or fresh garlic paste)
  • 1 1/2 tsp instant yeast
  • 23 tbsp sugar
  • 1 1/22cups water

Instructions

  1. In a large mixing bowl, add all the dry ingredients
  2. Pour in the water starting with 1 1/2 cups gradually adding more if necessary.
  3. Mix well using a whisk until you have a smooth batter.
  4. The batter should be thick enough to coat the back of a spoon.
  5. Cover and set aside for 1 1/2 – 2hrs. It needs to rise and fill up with air bubbles.
  6. Heat a flat non stick pan and lightly oil it.
  7. Add the batter using a ladle. Cover and cook for 3-4 min.
  8. Once the top is dry, flip it over and cook the other side for 2 min.
  9. Set aside and repeat with the rest
